5 New Bourbon Pours Worth Chasing This Fall

3 min read

From Garryana oak to a limestone cellar, fall 2026's release calendar is stacked. Here's where we'd spend our hunting energy.

The leaves are turning, the fire pit is back in rotation, and bourbon's biggest release season is in full swing. Kentucky Bourbon Festival week may be behind us, but the bottles keep coming. Some of this fall's most talked-about pours are already on shelves; others are still a few weeks out. Here are five we'd put on the list, from the unicorns to one you can actually find.

1. Bardstown Bourbon Company 2026 Discovery

Bardstown's annual Discovery series is all about blending, and the 2026 edition brings together 7-, 10- and 11-year-old Kentucky bourbons before giving them four months in custom Garryana (Oregon white) oak. It's bottled at 112.8 proof, and the official notes read like a fall dessert menu: toasted oak, burnt sugar and baked apple cobbler, with dried cherry and cinnamon behind it.

Proof: 112.8 | Suggested price: $139.99 | Out now in limited quantities nationwide

How to pour it: Neat, then add a few drops of water. At this proof, the cobbler notes open up with a little help.

2. Maker's Mark Cellar Aged 2026

The fourth edition of Maker's most mature release. This year's blend is 49% 11-year, 33% 12-year and 18% 14-year bourbon. It spends its early years in traditional warehouses, then finishes its aging in the limestone cellar at Star Hill Farm. Look for dark cherry, clove and vanilla bean on the nose, honey, brown sugar and ripe plum on the palate, and a finish of almond, nutmeg and crisp green apple.

Proof: 112.1 (cask strength) | Suggested price: $175 | Released September 1 in the U.S.

How to pour it: Save this one for a cool night and a big rock. It's the rare wheated bourbon with this much age behind it.

3. Four Roses 2026 Limited Edition Small Batch

This is the 19th annual Limited Edition Small Batch, and it's Four Roses' oldest blend yet. Master Distiller Brent Elliott pulled four recipes: a 14-year OBSK, a 14-year OESK, a 15-year OESV and a 23-year OESK. It's bottled at barrel strength and non-chill filtered. Expect apricot and elegant oak up front, baking spice and honey on the palate, and fruit, vanilla and caramel on the finish. Only about 16,800 bottles were made.

Proof: 109.2 | Suggested price: $249 | Releases October 10

How to pour it: Neat, and share it. A 23-year component doesn't come around often.

4. Old Forester 2026 Birthday Bourbon

This is the annual unicorn. This year's Birthday Bourbon is 11 years old at 97 proof, drawn from 212 barrels. It comes with a good story too: after a holiday weekend, the new make sat in the cistern room for six days, which nudged its barrel entry proof a hair lower than usual. Old Forester switched to an online sweepstakes for distillery bottles this year, so if you see one on a shelf, don't overthink it.

Proof: 97 | Suggested price: $199 | Limited retail allocations began in September

How to pour it: Neat, in the good glassware. At 97 proof it's easygoing enough to sip slowly all evening.

5. The Tennessee Wildcard: Chattanooga Whiskey Moldovan Ice Wine Cask Finish

Not everything on the list has to be a hunt. Chattanooga Whiskey's eighth Barrel Finishing Series release blends five malt whiskeys with a bourbon, then finishes them for more than a year in rare Moldovan ice wine casks. Ice wine is made from grapes left on the vine until they freeze solid. The notes are pure comfort: French toast, wildflower honey, toasted oak, cream soda and candied ginger. It's close to home and priced to open.

Proof: 95 | Suggested price: $59.99 | Out now in Tennessee and select states

How to pour it: Try it in an Old Fashioned with a barspoon of maple syrup instead of sugar. It's fall in a rocks glass.

The Bottom Line

Fall 2026 has something for every kind of drinker, from the collector chasing a 23-year Four Roses component to the neighbor who just wants something new to pour by the fire. Hunt the allocated bottles if you've got the patience, but don't sleep on the ones you can walk in and buy today.
